Making an organic vermouth without compromising on flavour is no easy feat. At Bodegas Valdepablo we gave it a go, and the result was Organic BioMio — a vermouth made from organically grown grapes that retains all the character we expect from every bottle that leaves our winery in Terrer.
What makes Organic BioMio different
It all starts in the vineyard. Organic grapes are grown without synthetic pesticides or chemical fertilisers, which demands more dedication from the grower, but produces a base wine with fewer interferences in its aromatic profile. When that base wine meets the botanicals during maceration, the aromas come through with greater clarity. The red BioMio has a mahogany colour with amber hints. On the nose, spices, medicinal herbs, liquorice, and a subtle woody note come through. On the palate, the bitterness is gentle, with hints of oak, dried fruits, and a citrusy finish that keeps things fresh. It’s an approachable vermouth — unpretentious, but with enough depth to make the second glass just as interesting as the first.
And the white? It follows the same philosophy of controlled origin, but with a lighter, more floral profile, designed for those who prefer a less intense aperitif. In the case of BioMio, we’re talking about genuine certification, grapes with known traceability, and growers we work with directly in the Calatayud area. Calatayud has a dry climate with a wide temperature range between day and night — conditions that favour grapes with concentration and character. Working with organic growers from the area allows us to make the most of those qualities without forcing the process.
